Around the Table March // Lemon Desserts

Happy March! I can't believe I am already into another month of the around the table linkup, this is my third month and each month it grows a little bit. As always I am excited to see where this goes and i hope you are enjoying linking up your recipes with me each month.

So, this months theme is lemon desserts. So i decided to share this lemon muffin recipe that I made with my mom for a baby shower while I was back in Michigan for spring break. It has the perfect amount of lemon and they tasted so good!

Ingredients:
6 cups of all purpose flour
4 cups of Sugar
3/4 teaspoon of baking soda
3/4 teaspoon of salt
8 eggs
2 cups (16 oz) of sour cream
2 cups of butter melted
3 tablespoons of grated lemon peel
2 tablespoons of lemon juice

Topping:
3/4 cup of flour
3/4 cup of sugar
1/4 cup of cold butter (cut up into cubes)

Glaze:
1/2 cup of sugar
1/3 cup of lemon juice

Directions:
In a large bowl combine the flour, sugar, baking soda, and salt. In a second bowl combine the eggs, sour cream, butter, lemon peel and juice. Stir into dry ingredients until batter is moist. Fill greased or paper lined cups three fourths full.
In a small bowl combine flour and sugar, cut in butter until mixture is like course crumbs. Sprinkle over the top of the batter. Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean when inserted into the center of the muffin. Cool for five minutes before putting on wire racks. In a small bowl wisk glaze ingredients then poor over warm muffins. (i didn't make the glaze but i think i would if i made them again)
