Recipe: Cranberry White Chocolate Oatmeal Cookies

Hope your having a good Wednesday, I can't believe it's almost Valentines day already. It seems like February is going by fast already. The other day I took these cookies to a weekly dinner I have with two of my close friends. We all loved them, and even got ice cream to have with them which made them even better!

I really liked this recipe because it was different than what i normally make and I really liked how it had cranberries in it instead of using raisins which aren't my favorite. Anyway, I thought I would share them with you because I really want to start having more recipe's on the blog, so i thought this one would be the perfect start.

Ingredients: 
1 cup of unsalted butter (I used salted and they turned out just fine, so i think it's up to you) 
1 cup of brown sugar
1 cup of regular sugar
1tbs of ground cinnamon
2 eggs
1/2 tbs of Vanilla
2 cups of flour
1/2 tsp baking soda
1 tsp of baking powder
1/2 teaspoon of salt
1 1/2 cups of Oats (I used old fashioned Quaker oats)
1 cup of dried cranberries
1 cup of White chocolate Chips

Instructions: 
In a stand mixer (or bowl) mix together butter, brown sugar, and white sugar. Add the eggs one at a time, beating after each one.  Mix in the Vanilla. 
Combine the flour, baking soda, baking powder and salt in a different bowl. Stir together, then gradually add the flour mixture to the butter and beat until moist. Add the oats, cranberries, and the white chocolates. Then Cover and refrigerate for two hours. 

Set the Oven to 375 degrees, bake for 8 minutes. Roll the dough into balls that are about 2tbs sized. place them on a cookie sheet lined with parchment paper (I didn't use parchment paper and they came off fine, but if you have cookie sheets that stick I would recommend using the parchment paper). Let cookies cool completely then put in airtight container for storage.

  3. YUM! My husband lovvvves white chocolate cookies, so I'll have to make these for him! I love that you used cranberries instead of raisins. These sound delicious!

  4. Oh you should girl! They were so good, my friends loved them! I don't really like raisins so the cranberries were way better in my opinion :)
